It's Healthy Friday at Lake Mary Life Publishing...or is it?! Since a surprise visit by a local food truck a couple weeks ago, our Art Director, Heather Loomis, and Account Executive, Penny O'Connell have been obsessed with recreating a recipe for Acai Bowls. Now the health trend is sweeping our office...although not everyone is quite on board...

Want to try these yummy concoctions for yourself? See Heather and Penny's recipe below! And if you want to see how the meal went over with some of our male staffers...check out this video that's sure to make you chuckle!
From the health nuts at Lake Mary Life Publishing
Blend together:
1 acai smoothie packet (found in the frozen fruit section of your grocery store)
1 frozen banana
¼ cup coconut or almond milk
(Put mixture in the freezer until the consistency of ice cream)
Put 1 TBSP of coconut oil in a bowl and freeze for 15 min or until hard
Once frozen, scoop the acai mixture on top of frozen coconut oil
Add your favorite healthy toppings and enjoy!
Suggested Toppings:
Fruit - raspberries, bananas, strawberries, pineapple, mango
Hemp seeds
Coconut flakes
Cacao nibs
Ground flax seed
Peanut butter (We used PB2 Powder mixed with water to drizzle over the top)
