The Celeste Hotel, which recently celebrated its five-year anniversary, is an on-campus, upscale hotel at the University of Central Florida. The Celeste proudly serves not only the school, but the entire Central Florida community – blending boutique charm with the amenities of a full-service hotel.
“As a Tribute Portfolio property within the Marriott family, the Celeste has spent the past five years providing traditional hospitality while staying true to its creative, forward-thinking identity. Food and beverage enhancements are a big part of that identity,” says Director of Sales Sarah Ehmke.
Guests now enjoy a daily happy hour, an expanded morning bistro experience with convenient grab-and-go and coffee bar options, and streamlined in-room dining and poolside services powered by QR codes. These innovations allow guests to order directly from the kitchen at their convenience, whether they are seeking faster service or a contactless experience.
At the heart of the Celeste’s culinary reputation is Aurora, the hotel’s signature restaurant, led by Executive Chef Mike Trudnak. Known for his Modern American fusion cuisine, he keeps the menu fresh, current, and sometimes surprising. Over the years, Aurora has gained attention for its adventurous offerings, from kangaroo to camel meatballs, alongside more familiar favorites elevated with flair.
“Our identity has stayed consistent throughout our first five years and will continue to do so,” says Chef Trudnak. “But we are always looking to add new and exciting dishes to the menu that our guests can never predict.”
Aurora also hosts many special dining events, including the always popular Easter buffet. These seasonal offerings reflect the hotel’s dedication to innovation and community engagement.
